Vanilla Sponge Cake

 An easy peasy vanilla soft and moist vanilla sponge cake.

Makes 7” cake

Ingredients:

1/2 cup curd (Add 2 eggs in case making it with eggs)

1/2 tsp Baking soda

1 tsp Vanilla

2/3 cup Powdered Sugar

1/2 cup Oil

1 cup All purpose flour

1 tsp Baking powder

1/2 cup Milk

Method:

Whisk the curd well to remove any lumps. Add baking soda. Lightly mix and set is aside for 8-10 mins. You will start to see froth setting on top.

If using eggs, whisk the eggs to get a frothy mixture and then continue from next step.

Add powdered sugar and vanilla and mix well. Add oil and mix well.

Now sieve in the flour and baking powder.

Gently fold in the batter through cut and fold method. Start to add milk gradually. You should have a free flowing batter.

Now grease a 7” tin with some oil. Pour the batter into the greased tin.

Bake at 160 for 35-40 mins or until toothpick comes out clean.
