It was my son’s first birthday amid lockdown and I knew I had to make this special. Cupcakes were on my mind, but something different. I stumbled upon these red velvet cupcakes which are so easy and need minimal ingredients.
Makes around 11-12 cupcakes
Ingredients:
1 ¼ cup all purpose flour
¾ cup powdered sugar
3 tbsp cocoa powder
½ tsp baking soda
1 tsp baking powder
1 large egg
¾ cup vegetable oil
½ cup buttermilk (1/2 cup milk + 1 tbsp vinegar. Mix and
keep aside for 10 mins)
1 tsp vanilla
8-10 tbsp red gel color
1 cup chopped white chocolate
1/3 cup cream
Method:
In a large
bowl, whisk together eggs, oil, buttermilk, food coloring, and vanilla.
Sieve
together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add this to the wet mixture
Mix well. Take
care not to overmix the batter.
Pour this
into cupcake liners. Fill only half the liners
Bake in
preheated oven at 180 C for about 15-2o mins until skewer come out clean.
Let it cool
completely
Heat cream.
Pour this on top of chopped chocolate.
Put this mixture in the microwave till the chocolate completely
melts. Cool this mixture down.
Use an electric beater to whip this mixture until light and fluffy.
Put it in a piping bag and pipe on the cupcakes.
