A traditional African chicken curry with coconut milk
Serves 4-5
Ingredients
6-8 pieces of chicken
2 tsp ginger garlic paste
1 tsp red chilli paste
1 tsp green chilli paste
2 medium onions, chopped.
3 tomatoes pureed
1 cup thick coconut milk
2- bay leaves
2-3 medium potatoes, cut into wedges and fried
½ tsp haldi powder
1 tsp red chilli powder
½ tsp dhana jeeru powder
½ tsp garam masala powder
3 tbsp fresh cream, optional
4-5 tbsp chopped coriander
Salt to taste
Method
Heat oil in a vessel. Add bay leaves. Fry the onions till golden brown. Add the pureed tomtato and cook for about 2-3 mins.
Add the
ginger garlic paste, red chili paste and green chili paste. Cook till the
chicken is almost done. Add the dry masala powder and stir. Add salt.
Now add the coconut milk and cook for about 4-5 mins. Add
the potato wedges. Add fresh cream if you wish to.
Simmer for 4-5 mins.
Garnish with chopped coriander.
