Considering it’s the season of mangoes, this was on my to do list for quite sometime. After a few failed attempts, I finally managed to nail this. This recipe is incredibly easy to make and requires very few ingredients resulting in delicious creamy mango ice cream
Makes about 250 gms ice cream
Ingredients
2 Alphonso mangoes
1 cup milk
6 tbsp sugar
4 tsp vanilla custard powder
Method:
Make a pulp of the mangoes in the mixer. This should result
in around 1 cup of mango puree.
Heat the milk (keep 3-4 tbsp aside). Add sugar and continuously
stir till the sugar dissolves.
Make a slurry of the milk kept aside with custard powder and
mix in the sweetened milk. Continuously stir till it becomes thick.
Turn off the flame and let it come to room temperature.
Now take a large bowl. Add this milk mixture along with the
mango puree and beat it with an electric beater on medium for about 4-5 minutes
till the mixture becomes nice and fluffy.
Empty this into an airtight container and keep in freezer
for 3-4 hours.
After 3-4 hours, again put this mixture in a vessel and beat
for 4-5 minutes and keep it back in the freezer.
Do this for a total of 3-4 times. This will result in soft
and creamy ice cream.
