This is a vegetarian variation of the Chicken Fried Rice in my earlier post.
Serves 4-5 people
Ingredients:
1 bunch spring onions, chopped
1 capsicum, cut in long strips
2 carrots, chopped to small pieces
2 tbsp soya sauce
2 tbsp green chilli sauce
2 tbsp oil
Salt
Plain white rice cooked for about 4-5 people
Method:
In a vessel, heat oil and add the carrots and fry well till they become soft.
Add chopped spring onion to this and cook well.
Add capsicum cook for 4-5 minutes.
Now add salt, soya sauce and green chilli sauce and mix well. Let it simmer for 5-10 mins (you can add more sauce if you like).
Now add this to the cooked rice and simmer on low flame for 15-20 mins, stirring occasionally.
Your fried rice is ready.
