Spanish Omelette

I had wanted to make this dish for a long time but for various reasons, couldn’t do so.
However, recently I had the opportunity to do make this dish. I had to look at quite a few recipes before coming up with this one.

Serves 3-4 people

Ingredients:
4-5 medium potatoes, finely chopped to small pieces
2-3 medium onions, finely chopped and fried
3 eggs
1 tsp pepper
1 tsp dry herb seasoning
3 cheese slices
2 tomatoes, finely chopped
3-4 salami slices
¼ cup mozzarella cheese
Salt to taste
3 tbsp Oil

Method:

Add the finely chopped potatoes in hot oil. Add salt and cook till they turn mushy.

Add fried onion to this and mix well.
Now whip 3 eggs in a separate bowl. Add salt and pepper for the eggs

Add the potato onion mixture to this and mix well.

Now heat oil in frying pan.

Add half of the above mixture. Flatten and round it well with spatula.

Add salami slices, tomato slices, mozerella chesse.

Now cover this with the other half of the mixture. Cover the pan and cook well till the base turns crispy and brown.

Now flip this on the other side and cook till it turns crispy and brown.

Remove from flame and cut into pieces.


Serve hot with garlic bread.
