Wonderful and simple way to eat the traditional Parsi papeto
(potato).
Serves 4-5
Ingredients:
4-5 medium potatoes, chopped in small thin pieces
1 tsp mustard seeds (rai)
15-20 curry leaves
2-3 chopped green chillies
2 tsp haldi
1 cup green peas (you can reduce the qty as per taste)
A pinch of asafoetida (hing)
Salt
Oil
Method:
Heat oil in a non-stick cookware. Heat it well so that the
mustard seeds splutter. Add curry leaves to this.
Now add the chopped potato and green chillies and mix well.
Now add the hing, haldi and peas and mix well.
Cover with lid and cook on slow flame.
Keep checking every few minutes.
If you feel that the potato is sticking to the bottom of the
vessel, add little oil.
If you feel that it is too dry, add little water to make it
soft and moist.
Garnish with coriander.
