Parsi Omelet

Hi All, this particular recipe is a twist and tweak of the traditional parsi omelet done by my husband (it turned out delicious by the way!!). This is specially made on lazy Sunday mornings by him for breakfast. Do try and let me know your comments.

Serves 4

Ingredients:
4 eggs
1 finely chopped onion (small)
1 tsp black pepper powder
2 tsp dhana jeeru powder
2 tsp haldi
2 tsp red chilli powder
2 tsp curry powder
2 tsp parsi sambhar masala powder
2 tsp garam masala powder
1 tbsp ginger garlic paste
1 tbsp red chilli paste
Salt to taste
Chopped coriander
Oil to fry

Method:

In a vessel mix all the dry masala powders together.

Add 4 beaten eggs with onion, ginger garlic paste, red chilli paste, chopped coriander and salt and beat well till fluffy.

Heat oil in pan. Make sure the oil is hot before you pour this mixture in the pan.

Cover the lid and let it cook on medium flame for about 5-10 mins.

Check using a spatula whether the side facing the pan is brown in color. If yes, then turn the omelet so that the other side can be cooked.

Cover with lid and make sure it also cooked to the same brown color as the first side.

Serve hot with chapatti or bread.









PS: If you want to make it nice and crunchy you can add potato wafers or potato sticks (also known as Sali by us Parsi’s) when you are turning the omelet to the other side.
