Paneer Afghani

For all the paneer lover out there, this is just one of the many delicious ways to enjoy your paneer rather than the boring and usual way of cooking it.

Serves 4-5 people

Ingredients:
500 gms paneer, cut into cubes and fried
3 medium onions, cut into 4 pieces each
8-10 almonds, soaked overnight and skin removed
8-10 cashews
1 tsp khus-khus (poppy seeds)
3-4 green chillies
8-10 curry leaves
1 tsp garam masala
2 tsp white pepper
1 tsp ginger garlic paste
2-3 tsp crushed kasuri methi
100 gms curd
Salt
Water, as required
2-3 tbsp oil

Method:

Boil the onions and cashews till onion changes becomes translucent and soft. Take off gas and cool.

Grind this with the soaked almonds to fine paste.

Now add khus-khus, chillies, curry leaves. Add few drops of water and grind it to a fine mixture.

Heat oil. Add the above paste and cook well for about 8-10 minutes.

Add ginger garlic paste and cook for about 2 mins.

Add the garam masala, white pepper, kasuri methi and mix well.

Add beaten curd to this and cook well for about 7-8 mins.

Add salt as per taste.

Add water to make gravy of your consistency (it should ideally be a little thick).


Serve hot with chapatti or naan and onion rings on the side.
