Palak Paneer

As you know, palak is extremely nutritious for health. However, there are quite a few people who do not like to eat palak. So, here is an easy way to make the entire family enjoy palak with the deliciousness of paneer.
Serves 4-5 people

Ingredients:
2 bunches palak, washed and cleaned.
500 gms paneer, cut into cubes of your choice and fry and keep aside.
2 onions, finely chopped
8-10 cashews
2 tomatoes, finely grated or pureed.
1 tsp haldi
1 tsp garam masala
1 tsp red chilli powder
1 tsp dhana powder
2-3 tbsp cream, to garnish
Salt
3 tbsp oil

Method:
Blanch the palak in a large vessel until it shrivels up and releases its water content.

In a mixer, grind cashews to a fine powder. Add the blanched palak to this and mix well.

In a kadai, add the chopped onion and fry till golden brown.

Add the tomatoes and cook well, till oil comes on surface.

Add the haldi, red chilli powder, dhana powder and garam masala powder and salt and cook well for about 2 mins.

Now add the cashew-palak puree and mix well. Let it simmer for about 10-15 mins on slow flame.

Once this is done, add the whipped cream and mix well. Add the fried prices of paneer to this and let it sit for about an hour before serving.

Serve hot with roti or naan and onion rings on the side.
