Another variation of paneer bhurji that I
wanted to make for along time. So here it is. Healthy version of paneer bhurji.
Serves 4-5 people
Ingredients
300 gms paneer, cut into small cubes
2 bay leaves
2 medium onions
2 medium tomatoes, finely chopped
1 bunch spinach, chopped coarsely
2-3 bay leaves
2 tsp haldi
2 tsp red chilli powder
2 tsp garam masala powder
2
tsp kasuri methi
1 tsp ginger garlic paste
1 tsp jeera
2-3 tbsp ghee
Salt
Method:
Heat the ghee in a vessel. Add jeera to
this and let it splutter.
Add the bay leaves
Add finely chopped onions. Cook till onions
turn golden brown.
Add chopped tomatoes. Cook till the
tomatoes are mushy.
Now add all the dry masala’s and cook for
about 4-5 mins
Add the washed spinach and cover. Cook till
the spinach leaves wilt.
Add salt. Dry our the excess water by
increasing the flame.
Now you should have a thick gravy.
Add the paneer. You can either add it in
the form of cubes or just mash it.
Mix well for about 7-8 mins.
Serve hot with chapati or naan.
