Unlike the usual palak paneer recipe that we usually eat, I
decided to tweak a few ingredients to make this in a different yet healthy and
delicious way.
Serves 4-5
Ingredients:
2 bunches palak, wash thoroughly and soak in water for at
least 1 hour. Do not chop it.
500 gms paneer, diced
3 medium onions, roughly chopped
2 tsp chopped ginger
8-10 cloves chopped garlic
10-12 cashews
1 tsp haldi
2 tsp red chilli powder
2 tsp dhana jeeru powder
2 tsp garam masala powder
3 tbsp whipped cream
1 tsp corn flour
Salt to taste
3 tbsp Oil
Method:
Fry onion till it turns translucent. Add chopped ginger,
chopped garlic, cashews and palak.
Stir and cook till the palak shrivels.
Let it cool. Grind this to fine paste. Add some water if
required.
Now heat oil. Add haldi, red chilli powder, dhana jeeru,
garam masala powder. Stir for about a minute.
Add the ground palak mixture to this and stir well. Let it
simmer for about 15-20 mins. Keep stirring in between.
In a bowl, take the whipped cream. Add corn flour to this
mix well. Add this to the palak mixture.Stir well.
Now add the diced paneer pieces. Simmer for about 5-10 mins
more and switch off flame.
Serve hot with naan or chapatti.
