Gobi Lababdar


A super simple and easy to make dish for any week day dinner
Serves 4-5
Ingredients
1 medium cauliflower, cut into small florets
3 onions, roughly chopped
4 tomatoes, roughly chopped
1 tsp melon seeds
10 cashews
10 almonds
2 bay leaf
1 tsp haldi
2 tsp red chilli powder
2 tsp kitchen king masala powder
1 tsp garam masala powder
3 tbsp whipped cream
2 tsp chopped corainder
Salt
4 tbsp oil.

Method

Fry the cauliflower lightly till golden brown and keep aside. 

Sprinkle salt enough for the cauliflower. Ensure to do this while it is still hot.

Boil the onions, tomatoes, melon seeds, cashews and almond till the tomatoes turn mushy. Remove and cool. Grind this to a fine mixture.

Heat oil and add the bay leaf. Add haldi, chilli powder, kitchen king powder and garam masala powder and mix well. 
Add the onion-tomato mixture to this. Add salt and cook for about 1-15 mins.

Add the whipped cream to this and mix well. Add the cauliflower and simmer for about 10 mins.

Add chopped coriander and serve hot.
