This recipe involves chicken marinated in curd and other
masalas and then cooked with whole spices.
Ingredients:
500 gms chicken
3 medium onions, chopped long and fried till brown in color
(similar to the type we have for biryani)
2 medium tomatoes, grated
200 gms curd
2 tsp haldi
2 tsp red chilli powder
1 tsp garam masala
1 tsp tandoori masala
2 tsp chicken/meat masala
1 tsp dhana jeeru masala
2 tbsp ghee
5-6 cloves
2-3 cardamom
2-3 bay leaves
2 inch cinnamon stick
2 dagad phool (Black stone flower)
½ star anise
Salt
Method:
Marinate the chicken in curd, haldi (1tsp), red chilli
powder (1tsp), chicken masala (1tsp), garam masala, tandoori masala and salt
for about 6-7 hours.
Heat ghee in a vessel. Add whole garam masalas and cook till
aroma. Add the fried onion and cook for about 2 mins.
Add haldi (1tsp), red chilli powder (1tsp), dhana jeeru
powder, chicken masala and salt.
Cook till masalas mix well with the onion.
Now add the tomatoes and cook till oil comes on surface.
Now add the marinated chicken along with all the curd and
masalas and mix well.
Do not add water yet. Let it cook for about 4-5 minutes and
add water only if required.
Keep stirring on low flame till the chicken is cooked.
You can garnish it with kasuri methi.
Serve hot with chapatti or naan.
