After a lot of searching and doing a lot of combinations,
finally managed to crack the famous Lonavala fudge recipe. It’s quick,
delicious and extremely easy to make.
Makes about 500 gms of fudge.
Ingredients:
1/2 cup of walnuts
400 gms of sweetened condensed milk (1 large tin)
11 tbsp cocoa powder
3-4 tbsp butter
1/2 tsp of vanilla essence
Method:
Seive cocoa powder and keep it aside.
Coarsely grind walnut in a food processor.
Grease an aluminum or glass dish with butter and keep aside.
Make sure it can hold about 500 gms of fudge or else you might have to make the
fudge in more than 1 dish.
Heat butter in a nonstick pan over low heat. Let it melt and
then and add condensed milk.
Mix well and cook for about 3-4 minutes until the mixture
releases oil. Keep stirring continuously.
Now add sieved cocoa powder and mix well. Cook for another
3-4 minutes, stirring it continuously. Check for sugar. If required, add icing
sugar. (I did not add any sugar as I found the sweetness from the condensed
milk to be perfect for the fudge)
Now add ground walnut and cook for another 2-3 minutes until
the mixture thickens and starts to leave the sides of the pan.
Add in the vanilla essence and stir wll.
Transfer the fudge mixture into a greased pan while it is
still hot. This ensure that all the fudge from the pan is in the grease dish
Let it cool down completely and chocolate walnut fudge is
done.
You can keep it in fridge for storing. However, do remove it from the fridge atleast 15-20 minutes before eating to get the actual taste of
fudge.
