For quite some time I wanted to make a cake that was not
made of the usual flour. I happened to stumble upon this concept of biscuit
cake while reading an article on the web. I immediately check a few sites to
see what the hype as about this Biscuit cake and I discovered that it was
something unusual and very easy to make. So here is the way I made it.
Serves 6-7 people
Ingredients:
3 packets - Digestive biscuits (I used 120 gms per packet)
1/4 cup - Cocoa powder
1/2 cup – Refined Sugar
75 gm - Butter
1/2 cup – Walnuts, broken into small pieces
1/4 cup – Almonds, grind into fine powder
1/2 tsp - Vanilla extract
200 gm - Whipping Cream
100 gm - Dark Chocolate
Method:
Break the biscuits into small
pieces into a large bowl.
Heat a non-stick pan over medium
high heat and toast the broken walnuts for about 5 minutes, stirring frequently
to toast evenly. Add this to the broken biscuits.
Now let’s prepare
the chocolate syrup. In a medium sauce pan add sugar and cocoa powder. Stir to
combine and gradually add half of the whipping cream while stirring to combine
well. Add the butter to this mixture and place over medium heat.
Bring to boil
for about 7-8 minutes stirring constantly.
Remove from heat
and add vanilla extract. Set aside to cool slightly for about 10-15 minutes.
Pour the syrup
over the biscuits and nuts and combine well using a large spatula or spoon.
Grease a
no-stick round cakeware with butter. Transfer the mixture into this non-stick
round cake ware.
Press well using
the back of the spoon or an offset spatula.
Cover and
refrigerate for about 30 minutes to 1 hr before preparing the chocolate ganache.
Now let’s prepare
Chocolate Ganache. Chop the dark chocolate into small pieces.
Place the remaining
100 gms of whipping cream onto this chocolate and microwave for about 1 minute.
Let sit for 30
secs. Now slowly stir until the chocolate melts and combines with the cream.
Pour ganache
over the chocolate biscuit cake and refrigerate to set for about 3-4 hours or
overnight before serving.
Decorate
with powdered almonds, cut into slices and serve.
NOTE: You
can serve this with plain vanilla ice cream.
